Congrats on the job offer.

If I were you I would submit your EOI with the job offer on and also apply for a temporary work permit to cover until your residensy is granted.

As MB says your wife and kids could come to NZ on visit visas until PR is granted (with a job offer it should be done in that time). This is the way we are doing things and plent of others do the same so you wouldn't be on your own.
