With some doubt in this area, it may be safer for him to put an application in with his print qualification and work experience if his job skills are on the Long Term Skill Shortage List. If he can get enough points without needing a job offer, I would imagine, once he got to NZ he could look around for something that he prefers to do if he doesn't want to go into printing again.
I was under the impression that if you get in through the skilled migrant category based on the skillsyou would have to work a minimum of 6 months in that trade ie Print once you arrive in NZ
