Unless I'm mistaken, you can stay in New Zealand for 9 months on a visitor's visa as long as you don't intend to work. Perhaps you could do "6 months in NZ, 6 months in some warm tropical area where they serve you drinks with little umbrellas in them" kind of thing

Sorry, I don't have any advice about transporting your dog.
