Welcome aboard.

I believe that once you enter NZ your WHV will be converted to a WHP (Working Holiday Permit) and I think it would then be activated at the same time. This is in line with a lot of the other visas, apart from the LTBV. Stevey?s had a WHV for a while and is shortly due to leave for NZ, so he?d be the one to confirm this when he's next online.
