Default Stuck for something 'different' to make for dinner?

It is made of fatty pork with spices. The pork innard you are referring to is the pig intestine that the meat is stuffed into (though for the larger chorizo I would assume they would use beef as it is thicker and stronger). Pork intestines are the traditional choice for making sausages, though you can get some artificial ones these days.
