This is quite a big question, unless you get someone who knows from experience, which I guess is unlikely.

You have several options:
1) Check out the agency adverts
2) Check out the statistics on jobs
3) Look at the job adverts in the papers

If you visit my site, and go to the New Zealand Emigration section, you'll find a "New Zealand Links" page.

The sections you want are: Carer Guides & Jobs.

The career guides will give you some statistics and advice on CVs.
The jobs section will give you agencies & paper ads & some more statistics

You may get an idea from all that lot.
Getting a job from outside NZ is difficult, but not impossible.
It seems to be easier if you're a nurse or in a trade, so I would be doubtful of getting a job unless you're there.
